A European Wine Dinner

Many patrons of Chez François request we feature a few wine dinners on Friday nights. You asked, we delivered. Our opening wine dinner, will feature a taste of Europe with wines from the six leading wine producing countries in Europe.

We will feature a pre-dinner tasting focusing on great value wines from non-traditional grape varietals that you may not be familiar with.

We start the dinner portion of this event with a three white wines beginning with the 2007 Von Buhl Riesling “Kabinett” from Palz, Germany, it made the Wine Spectator's Top 100 Wines of 2008 scoring 91 points. One of the Great white wines of Italy the 2006 “Vintage Tunina” from Silvio Jermann is located Fruili, Italy. A blend of four grapes, it was #45 in The Wine Spectator's Top 100 Wines of 2008, scoring 94 points. Domaine Bott-Geyl, established in 1947, is a family-owned domaine now run by Jean-Christophe Bott. This organic winery’s 2005 Pinot Gris from the Sonnenglanz Vineyard recently scored 91 points from Tanzer.

The red wine begins with the 2004 Châteanuef-de-Pape from Clos du Mont-Oliver located in the Rhône Valley, France. This wine is sourced from Grenache vines with an average age of eighty years! The 2007 Poggio al Moro, from Enrico Santini is produced in Bolgheri·Tuscany, Italy. Only 1,700 cases have been produced of this blend of four separate varieties. Lovers of bold Tuscan wines will find much pleasure in this beautifully crafted wine. The 2006 Finca Sandoval from Manchuela, Spain recently scored 93 points from Robert Parker's Wine Advocate.

We conclude the evening with a “Ten Year” Tawny Port from Quinta do Noval in the Douro Valley of Portugal. One of the oldest port houses, Quinta do Noval is also arguably the greatest.

Organic Carrot Soup, Shrimp Mélange

A purée of roasted organic carrot soup, seasoned with caramelized shallots and Asian Spices, served with a sweet Gulf of Mexico shrimp mélange.

Lobster Raviolis, Herb Butter

Egg pasta raviolis filled with lobster, served with shaved Parmigiano-Reggiano cheese and a truffle butter sauce.

White “Vintage Tunina”, Silvio Jermann, Fruili, Italy, 2006

Torchon of Hudson Valley Foie Gras, Clementine Orange Marmalade

Chilled Duck Liver with a Clementine Marmalade, served with toasted brioche and micro-orange mint.

Pinot Gris “Sonnenglanz”, Bott Geyl, Alsace, France, 2005

Lamb Chop, Ratatouille Niçoise

A roasted Australian Lamb Chop served with a ragoût of sautéed eggplant, zucchini, mushroom, peppers, onion and tomatoes in a lamb reduction sauce.

Roulade of Veal Cohcella, Espagnole Sauce

A roulade of veal stuffed with ground veal, spinach and pâté de spices over a white bean and root vegetable purée and pancetta bacon with an Espagnole sauce.

Free-Range Duck Confit, Cherry Glace de Viande

Maple Leaf duck simmered in its own juices, served over a sweet potato purée and duck glace de viande with sun-dried cherries.

Poached Pears, Vanilla Bean Ice Cream

Bartlett pears poached with port and bark spices and served with a chocolate almond tuille, Madagascar Vanilla Ice Cream and a port/pear glaze.
